Passionfruit Mojito Mocktail
This passionfruit mojito mocktail is deliciously refreshing, with a hint of citrus, apple juice and some sparkle (in the form of sparkling water!). It's my take on the classic mojito, but the fruity non-alcoholic beverage kind! Perfect for a single serving or for pleasing a crowd!What makes it even better is the fact that you can make use of the wonderful fresh limes and passionfruit currently in season this autumn.
Ingredients
- 4 large mint leaves
- 1 tsp (5ml) freshly squeeze lime juice
- 1 tbsp (15g) passionfruit pulp
- 1 cup crushed ice
- ½ cup (120ml) apple juice
- ½ cup (120ml) sparkling water
Garnish
- mint sprigs
- lime wedges
Instructions
- Combine the mint leaves, passionfruit syrup and lime juice in a glass and muddle together with a spoon.
- Fill the glass with crushed ice, then pour over the apple juice, followed by the sparkling water.
- Garnish with sprigs of mint and lime wedges. Enjoy!
