- Hash browns
- Small flour or corn tortillas
- Mixed beans plain or spiced
- Corn kernels
- Eggs scrambled, fried or poached
- Cheese
- Smashed avocado
- Protein of choice chicken, bacon or smoked salmon
- Tomato diced
- Fresh baby spinach
- Relish or salsa
- Sour cream
- Fresh herbs (coriander or parsley)
Prepare the Toppings & Tortillas
Cook the hash browns as per pack instructions.
While the hash browns are cooking, heat the tortillas until soft and lightly golden. Keep warm, wrapped in a clean tea towel.
Warm the beans and corn, season with salt and pepper.
Scramble, fry or poach the eggs. Season to taste.
Assemble the board
Arrange small bowls with the beans, cheese and smashed avocado around the board.
Add tortillas, hash browns, eggs, protein of choice, tomato, spinach, relish, corn and sour cream.
Finish with fresh herbs, then serve and enjoy!
