Build the ultimate Breakfast Taco Board with fluffy eggs, smashed avocado, crispy hash browns, spiced beans, and all your favourite toppings. Perfect for a weekend brunch, special occasion, or DIY breakfast feast.

Ingredients
  

  • Hash browns
  • Small flour or corn tortillas
  • Mixed beans plain or spiced
  • Corn kernels
  • Eggs scrambled, fried or poached
  • Cheese
  • Smashed avocado
  • Protein of choice chicken, bacon or smoked salmon
  • Tomato diced
  • Fresh baby spinach
  • Relish or salsa
  • Sour cream
  • Fresh herbs (coriander or parsley)

Instructions
 

Prepare the Toppings & Tortillas

  • Cook the hash browns as per pack instructions.
  • While the hash browns are cooking, heat the tortillas until soft and lightly golden. Keep warm, wrapped in a clean tea towel.
  • Warm the beans and corn, season with salt and pepper.
  • Scramble, fry or poach the eggs. Season to taste.

Assemble the board

  • Arrange small bowls with the beans, cheese and smashed avocado around the board.
  • Add tortillas, hash browns, eggs, protein of choice, tomato, spinach, relish, corn and sour cream.
  • Finish with fresh herbs, then serve and enjoy!

Notes

Tip & Variations: 
  • Swap tortillas for gluten-free wraps if needed.
  • Make it vegan by replacing eggs with scrambled tofu and cheese with a plant-based alternative.
