How to Build the Ultimate Breakfast Taco Board

Perfect for a weekend treat or special occasion, it’s one of the best quick and easy breakfast ideas that’s both playful and delicious.

Ingredients You'll Need to Make this Breakfast Taco Board

Here’s everything you need to build the ultimate breakfast, along with tips and alternatives to make it your own!

  • Hash Browns: crispy and golden, they bring texture and a hearty base to the tacos. Frozen or homemade shredded potatoes work equally well.
  • Tortillas: the foundation for your tacos. You could go with flour, corn or even a mix of both. Small tortillas are best so guests can make perfect handheld portions. Gluten-free wraps also work. I went ahead and made my own using this recipe from Epicurious. 
  • Mixed Beans: Add creaminess and fibre. You could also use black beans, refried beans or even chickpeas. Plain or spiced is up to you. I like to toss them up with some garlic and spices like paprika and season with salt and pepper.  
  • Corn Kernels: sweet and bright. Use them fresh, from the can or from frozen and grill for that added flavour. 
  • Eggs: prepare them any way you prefer from fluffy scrambled to fried or poached. They add protein and richness to the board. For a vegan option, try scrambled tofu.
  • Cheese: for that wonderfully creamy topping. You could do your favourite shredded cheese, feta or a plant-based alternative. And there’s no limit to one, you could do multiple! 
  • Avocado: adds a great texture to the tacos. Here I’ve done them smashed with fresh lemon juice, salt and pepper. Substitute in guacamole or avocado slices if you prefer.
  • Protein of Choice: options include chicken, bacon or smoked salmon. Mix and match for variety. 
  • Tomato: juicy and sweet to add some freshness to the tacos.
  • Spinach: adds colour, and a light, leafy bite. Other greens like rocket or baby kale are good alternatives.
  • Relish or salsa: a great topping for tang and extra flavour. Salsa verde, pico de gallo, or a simple homemade tomato relish all work.
  • Sour cream: helps to balance flavours and adds a smooth coolness. Always a non-negotiable on my tacos.
  • Fresh herbs: coriander, absolutely, but you could also do parsley or chives.

Extra Toppings To Try

  • Lemon or Lime: wedges of citrus can brighten the flavour and add a zesty kick as a finishing touch.
  • Hot sauce or chilli flakes: for some optional added heat. 
  • Chorizo or sausages: add a bold smoky kick and some extra protein. Could be used instead of or as well as your choice of protein.
  • Mushrooms: sautéed or grilled for hearty and earthy flavours. Particularly great if opting for a vegetarian board. 
  • Peppers and Onions: grilled for a fajita-style twist. 
  • Jalapeños: fresh or pickled, ideal for spice lovers.
  • Fresh fruit: as an extra side to balance the savoury. Pineapple, berries and melon, all lovely additions. 

How to Make this Breakfast Taco Board

Follow the steps below to whip up this delicious feast… 

1. Prepare the Toppings and Tortillas

  • Pop the hash browns in to cook first, they’ll take the longest if oven-baked.
  • While that’s underway, go ahead and cook your protein of choice if required.
  • Warm your tortillas in a pan so they’re soft, pliable and golden brown. Ensure they’re wrapped in a clean tea towel so they stay warm.
  • Then, warm up the corn and beans. I like to toss the beans with a little garlic, paprika, salt and pepper. 
  • Scramble, poach or fry your eggs next. Don’t forget to season with salt and pepper to taste. 

2. Assemble the Board

  • Place small bowls of the seasoned beans, smashed avocado and cheese on the board first. This helps to ensure they’re contained, easily accessible and anchors the layout. 
  • Next, add on those tortillas. I like to add a pile on both sides of the board so that they’re easy to reach for all your guests, no matter the direction they approach the board from.  
  • After that, work your way from the biggest to the smallest item. In this case, it’s crispy hash browns, eggs, the protein of your choosing, spinach and tomato. 
  • Then add your condiments, relish and sour cream (mine are in cute little jars!). 

Tip: Don’t forget to include some teaspoons with your condiments. 

3. The Finishing Touches

  • Sprinkle corn in the spaces of your board.
  • Then garnish with fresh herbs for the pop of green that brings it all to life.
  • Serve and enjoy!

  • Tomato diced
  • Fresh baby spinach

  • Sour cream
  • Fresh herbs (coriander or parsley)

Instructions
 

Prepare the Toppings & Tortillas

  • Cook the hash browns as per pack instructions.
  • While the hash browns are cooking, heat the tortillas until soft and lightly golden. Keep warm, wrapped in a clean tea towel.
  • Warm the beans and corn, season with salt and pepper.
  • Scramble, fry or poach the eggs. Season to taste.

Assemble the board

  • Arrange small bowls with the beans, cheese and smashed avocado around the board.
  • Add tortillas, hash browns, eggs, protein of choice, tomato, spinach, relish, corn and sour cream.
  • Finish with fresh herbs, then serve and enjoy!

Notes

Tip & Variations: 
  • Swap tortillas for gluten-free wraps if needed.
  • Make it vegan by replacing eggs with scrambled tofu and cheese with a plant-based alternative.
